Fried Fish

Serve these golden, crunchy fish with a side of vegetables and rice or noodles. Top them with your favorite sweet or spicy garnish.

  • 8-10 small whole fresh white fish, cleaned and prepped (300-400g each)
  • ½ cup all-purpose or squash flour (70g)
  • cooking oil
  • ½ teaspoon white pepper
  • ¾ teaspoon salt
  • ½ teaspoon white pepper
  • 1 teaspoon cooking wine


  1. Season fish with salt, pepper, and cooking wine. Massage all ingredients into the fish. Let sit for 10 minutes.
  2. Place flour on a plate and dredge each piece of fish, then set aside on a separate plate.
  3. Heat 2-3” (7cm) of oil to 350°F (170°C). Use an oil thermometer to maintain temperature throughout cooking.
  4. Add fish to oil in small batches, flipping after about 90 seconds. Cook each piece for 3 minutes until golden brown (depending on the size of your fish).
  5. Remove fish when it reaches an internal temperature of 145°F (65°C) and drain on a rack. Serve immediately.
