Fruit Crisp

Cobblers always remind me of my family (especially my mother and grandmother) and summer. It’s a great way to use up end-of-season fruits – are you sad because those peaches you were excited about turned out a little mealy? Throw them in a cobbler! Some favorite iterations include peach-blueberry cobbler and apple cobbler.

  • 3-4 cups fruit, cut into bite-sized pieces (peaches, blueberries, apples, etc.)
  • 1-2 tablespoons sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • lemon juice (optional)
  • 1-2 tablespoons all-purpose flour


  • ¾ cup butter, melted (170g)
  • ¾ cup brown sugar (150g)
  • ¾ cup all-purpose flour (96g)
  • 1-2 cups oatmeal (80-160g)


  1. Preheat oven to 350°F (175°C).
  2. Place prepared fruit in an 8” x 8” (20cm) glass baking pan (with sides) until about 2/3 full with fruit.
  3. Sprinkle fruit with sugar (optional if using sweeter fruit), cinnamon, ginger, and nutmeg to taste.
  4. Stir the fruit and spices to mix evenly.
  5. Add lemon juice to the fruit if it seems too sweet (optional).
  6. Add 1 – 2 tbsp flour to thicken (optional).
  7. Combine melted butter and brown sugar. Add enough oats so that butter is soaked up (1-2 cups), stir together. Stir in flour.
  8. Spoon topping onto fruit.
  9. Bake for 30-40 minutes until topping is crispy and fruit is bubbly underneath.
