Peanut Butter Balls

Known as “Aunt Rena’s Peanut Butter Balls” to everyone in my family, this dessert has been at every family function since I can remember (and many years before I was around!). While it’s considered a ‘dessert,’ they are often put out as an appetizer because everyone would sneak them before dinner anyway. My uncles used to fight over them so it was a challenge to grab one before they could!

Ingredients

3 cups corn flakes (75g)
½ cup corn syrup (120ml)
½ cup white sugar (100g)
½ cup crunchy peanut butter
½ cup creamy peanut butter

Directions

Lightly crush corn flakes.
Note that it’s not 3 cups of crushed corn flakes, it’s 3 cups of corn flakes before they are crushed.
Bring corn syrup and sugar to boil across bottom of pan. Remove from heat.
Add peanut butter and crushed corn flakes to boiling sugar mixture.
Roll into balls and cool on wax paper.
Careful! They are hot!
