Spicy Mango Salad

A delicious side dish paired with Asian cuisine or BBQ. It’s also a tasty snack on its own.

Ingredients

  • 4 medium mangos, peeled and cubed
  • ¼ cup fresh lime juice (60mL)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red pepper flakes
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped shallots
  • salt and freshly ground black pepper to taste

Directions

  1. Place the mango cubes in a serving bowl.
  2. In a separate bowl, whisk together the lime juice and olive oil.
  3. Season with red pepper flakes, cilantro, shallots, salt, and pepper. Whisk briefly.
  4. Pour dressing over the mangoes.
  5. Stir to coat, then cover and refrigerate for 30 minutes before serving.
