Strawberry Cheesecake Bites

This is a fairly new recipe for the Rak household. However, it’s definitely here to stay! A couple years ago when I was trying to find a recipe for a party, I stumbled across these Strawberry Cheesecake Bites and they have been my go-to ever since. They are really simple but oh so delicious!

My daughter loves these and for the holidays we’ll serve them along with Santa Hat Kabobs (green grape + banana slice + strawberry + mini marshmallow on a toothpick).

Ingredients

  • 1 lb strawberries (450g)
  • 4 oz cream cheese, softened (115g)
  • 1/4 cup powdered sugar (25g)
  • 1/4 teaspoon vanilla extract
  • 4 graham crackers

Directions

  1. Cut off the tops and hull the strawberries (hollow out a hole where the filling will go).
  2. Cut off a little bit of the bottom of each strawberry so they will stand up straight when placed on a platter. Be careful not to cut too much off of the bottom or the filling will go right through.
  3. Pat the insides of the strawberries with a paper towel to dry them out a little. This prevents the cream cheese from sliding out of the strawberries and from getting too watery.
  4. In a bowl, combine the cream cheese, powdered sugar, and vanilla with an electric mixer.
  5. Put the cheesecake filling in a piping bag or ziplock bag and cut off the tip of the bag. Fill each strawberry with the cheesecake filling.
  6. Keep refrigerated until ready to serve.
  7. Crush the graham crackers until they are fine crumbs. If desired, dip the strawberry, cheesecake side down, into the graham cracker crumbs before serving.
  8. These are best made and served the same day. They get mushy and watery if you make them a day ahead.
 
Notes:
  1. I usually double or triple the recipe because these go quickly! Any leftover cheesecake filling goes great on other fruit, pancakes, or just by the spoonful! Yum!
  2. Do yourself a favor and buy a strawberry huller. It’ll make prepping the strawberries go so much quicker!
  3. I usually serve the graham cracker crumbs on the side instead of dipping the strawberries. This way the crumbs stay crispier and you have a gluten free option.
