Quick Apple Pie “Sharlotka”

We used to have an apple garden with a particular kind of sour apple (antonovka), which was perfect for this pie. We’d make this a lot in the fall. I really love the contrast between the sourness of the apples and sweetness of the dough.

Ingredients

  • 4-5 large tart/sour green apples, peeled and cut into 1” (2.5cm) pieces
  • 4 eggs
  • 2 cups sugar (400g)
  • 1 ½–2 cups all-purpose flour (200-275g)
  • vegetable oil to prevent sticking

Directions

  1. Brush vegetable oil over the inside of a 9” x 13“ (33cm x 23cm) pan.
  2. Spread prepared apples in pan.
  3. Using an electric mixer, whisk eggs on high speed for 3 minutes.
  4. Add sugar and continue mixing at high speed for another 3-5 minutes until the mixture gets foamy, fluffy, and thick.
  5. Add flour and slowly mix it into the mixture until it all comes together.
  6. Spread the mixture over the apples. It doesn’t have to be perfect!
  7. Bake at 375°F (175°C) for about 25-30 min. Surface should get crispy and meringue-like.
  8. Serve warm or cold. Store in refrigerator for up to 3 days.
